It seems the usual suspects fit the bill here.
CSU Pueblo has a few self-paced science courses w/ labs for non-majors at ~$625 each.
Idaho State has a self-paced Astronomy course w/ lab for $425. (Register through the University of Idaho website, not Idaho State)
BYU has a self-paced Physiology course w/ integrated lab (i.e. not 3 cr + 1 cr lab) for ~$500.
If community colleges are fine,
New Mexico Junior College has a few Biology courses w/ lab online for ~$250 each. (full semester)
Central New Mexico College has a couple of Biology courses for non-majors w/ lab online for ~$200 each. (full semester)
As for "easiest", 100-level courses for non-majors are not exactly heavy...
