Are these type of degrees just as good as a general BA or BS? And how would one explain them in the workplace?

Applied degrees vs general degrees: They are just as good, very similar in usage, but for different purposes.
Applied are for professional or specialized experience or advanced training, such as engineering technology - usually these are terminal degrees at the Associates, Bachelors level and very rarely reach Masters or higher. Most people who do get a Masters get one in Business or Management within that subject matter, ie MBA/MS in Engineering Technology Management.
General degrees are for analysis and knowledge of specific studies in mainly arts, engineering, sciences or specific subjects, such as Civil Engineering or programs that can lead to higher education, these are also for programs that require licensing (nursing and other engineering professionals).
