Make sure that you've met Pierpont's credit requirements. If you don't, for instance, have 6 credits in English/Communications, the previous link will show which Sophia courses will meet the requirement.
For the electives, you need to decide if you want an Area of Emphasis or not. If you don't care, just pick whatever Sophia courses don't overlap with what you already have and that only have 0-2 Touchstones. Yes, If you're going for a quick associates, Pierpont BOG AAS is your best option for a degree.
Basically - Having said that, do you know what you're going to do or pursue after the AA?
If it's COSC, EC, TESU, PUG, UMPI, WGU, or one of the other CBE providers that we recommend, you should be fine...
If it's a semi competitive Bachelors, you may want graded credits, in that case, this would be my recommendation;

You're better off listing your credits here so we can help. It might be just as easy to get a Bachelor's at UMPI as it is to get an AA, depending on what you already have.
School (Semester or quarter-based?)
Course #, full course name, # of credits, grade if less than a C
If you have something like a lab science, make sure to note that.

RA credits,
that can be used for electives, etc.
Just getting back into it,

The answer, of course, is "it depends." It depends on your strengths and interests. For me, anything in the Humanities or Social Sciences would be easy. That's true because I don't mind reading/writing intensive courses at all and also because I enjoy the subject areas. My best advice is to scan the CC catalog of course offerings and choose the Intro course that seems the most fun to you.

Ding Ding, it's always going to be the Intro courses you want to go into for the easiest classes. Having said that, you want to take courses that interest you, not just because someone says it's easy. For example, let's pretend your favorite subject is History and you love it, it would be great for you to take extra History courses as it interests you...
For me, it's my worst subject, so if I asked you, what you would recommend me... I would reject it! General questions get general answers... it will go in so many directions as there are so many subjects in the first year. If you want to take slightly harder courses, second year courses would be my pick... as long as you've got the prerequisites of course.

For me, art history was both one of my favorite courses and super easy. Art is pretty intuitive for me though.

For me business classes are the easiest. I have practically no interest in English or history courses so I struggle with them. I'm not great at math so I tend to loathe them. It all depends on the person. Topics that interest you are typically the easiest. Sometimes LL and UL doesn't really mean much either so I don't worry about those things. I've seen certain classes be a 100 level course at one college and a 300 level course at another.

Understand that these are three separate goals:
1. Relative ease is affected by multiple factors. Having an affinity for a particular subject, or even being familiar with the content of a course beforehand, will make it easier. The easiest format will tend to be competency-based, either multiple-choice quizzes/tests if you're good at that kind of test, or shorter papers. There are many options that can be completed within a few hours.
2. RA credits are specific to the school/degree. If you don't have a degree plan, then you shouldn't worry about RA/NA/ACE, etc. to start.
3. Community college is not what I would call "easy" relative to other options. There tend to be multiple assignments due every week, and there may be classes to attend at specific times, either in person, online, or both. The amount of work and the grading will vary, even for the same course at the same school, so it can be a challenge to determine relative difficulty. However, if community college is definitely for you, then you should have one or more meetings with an academic advisor to discuss your goals and create a tentative plan. That will be far more effective than any advice we can give you here.
