It is legit, but state accreditation institute on Malta "suffers from some problems" eg. https://theshiftnews.com/2024/11/28/high...embership/ and for some purposes such degree is not usable even if EU accredited, for example its use in Germany might be limited. (German ANABIN only recognizes degrees from Maltese universities, not from Maltese higher education institutes).
I was thinking about it too though I am far from decision time, the trouble is name of those institutes, I understand they want sound like the next big thing (and also overcome the problem that they can't use university in the name) - Neovarsity, Neoversity, Innovarsity, but I don't share the excitement and it sounds more lika scammy name, or gomycode - sounds like a good name for kindergarden uni at best, like a name of a random coding bootcamp. Might play a role for some degree use cases...
Also, there is no Woolf University. There is only Woolf. Woolf is something like institute of higher education, they cannot describe themselves as university. Their accreditation is currrentlly only valid until March 2025 - one more month.
Finally, there is no EU accreditation. If degree is accredited in EU country, by state accreditation agency, it is usually granted that it is recognized everywhere in EU. Except edge cases like above...and other exceptions...
