UMPI is a state university with a campus. Law school admissions focuses on your GPA, LSAT, and you. A top 5 law school is ambitious for anyone no matter what college they did their undergrad at. You need graded courses so the more you take at UMPI the better. Less ACE is best for law school. There have been students who've graduated from WGU who've gone onto law school so why would UMPI be a problem? WGU doesn't even give grades - just pass/fail. You should also take classes with the same professor over and over and communicate with them. You'll probably need letters of recommendation and this is how you get them.
