People suggest I just double major, but that'd cost a LOT more time and money compared to attending UMPI and not worth it imo. If I did this, should I even request a transcript from SNHU or just avoid it and submit the transcript from my community college and alternative credit courses? I've just heard that some universities will not let you transfer credits if they've been used for another degree at a different school. But then other people say its no problem. I just don't know what's true!

You won't have any trouble getting into UMPI. Because you already have a bachelor's degree you will be waived from the GEC requirements. The GEC is their general education curriculum. You will have to submit transcripts from everywhere you've taken classes. Every school has their own transfer credit policies. You'll need to complete a minimum of 30 credits at UMPI. You'll need to complete a required minimum UL courses in the major and out of the major at UMPI.
A suggestion is to consider an MBA at WGU once you complete your bachelor's degree. WGU is also competency based.
