Yes, you definitely have to weigh the need to study well for the nursing exams versus your need to finish a degree quickly.
You can see all of your exam options in the Student Guide to Credit by Exam. It is downloadable from the link above; it is at the bottom of the list of catalogs. Around page 20 is the list of all CLEPs. For 6 credits each in Arts & Sciences, consider Literature (3 options), Humanities, Social Science & History, and/or Biology CLEPs.
Do you like Psychology? There are a couple CLEPs in that subject.
The AA is limiting you to just Arts & Science choices. You could choose anything, including Applied Professional exams, if you switch to an AS. Either way, you have a lot of exams to choose from.
Also, make sure the Intro A&P course you have won't duplicate the A&P exam.
