The other cheap/easy 1-credit option that we KNOW about is from Clackamas College. But that one is only available 2 or 3 times a year.
I forgot about the 1-credit TEL College Readiness class. But this one may not be easy, fast, or transferable - depending on what you want it for.

Sophia.org has some one-credit courses like "Developing Effective Teams" and "The Essentials of Managing Conflict."

If it doesn't have to be RA credit, Saylor Academy's College Success (until May 30, 2022) and SOC101: Introduction to Sociology (until March 31, 2022) also both have 1-credit ACE recommendations. $5/attempt on the proctored exams.

For my youngest, I was considering having him take a one credit course at the local community college if Clackamas didn't work out, but I'm glad to see a post on this to siphon off some more ideas. :-)

You might want to tell us why you need a 1 credit course, if you're going for an ACE or NCCRS course, take a 3 credit course for the same price! LOL, why would you want to waste time on a 1 credit when you can get 3 for the same amount of energy, money, time... If you need an RA course that's graded, then yes, the freebie from is a great option or the ASU at $25. Clackamas has a few other 1 credit courses as well, they range from $10-$50 per credit, there are a few options, jch is taking the one for APA writing... I was looking at that course too!
