She can't take the CLEP or DSST because she already has those two courses from a B&M (Intro or Foundations and Ed. Psych). She has also taken Children's Lit. Any ideas where else she can take a test or quick course to fulfill this requirement?

YES! The Annenberg Media courses are 2 or 3 credits and CHEAP.
