Note: Miraheze is acting up right now, so I'm having problems accessing the wiki. This is limiting how much useful information I can get to at the moment.
If she hasn't already taken Presentation Skills, I would suggest Workplace Communication or Business Communication for 1C. It will arguably be more useful and not take up a SDC exam slot. Business Communication should come in as PCJ-215. Workplace Communication is (probably) BUS210.
Macro/micro econ doesn't meet GEC 2A/2B. Macro/Micro econ comes in as ECO207. The Econ course that meets GEC requirements is ECO100. Fairly certain ECO207 has never been a substitute for ECO100. Sociology works for 2B, while Intro to Ethics works for both. Those are already in the plan, so that's fine. And Macro/Micro econ is needed for a BABA anyway. Double check she's got at least 40 GEC credits and should be good.
HUM103 is no longer offered by UMPI. Fortunately, students tend to think the replacement course(s) being offered are easier.
Not sure if the 4C class you have listed there will work, but the Intro to Ethics will work. I would strongly suggest taking Ancient Greek Philosophers as well, if not already taken, to make Intro to Ethics easier. Ancient Greek Philosophers can be extra GEC credit, if it's needed.
Otherwise, I think it looks pretty good. I may also have missed something, but that seems to be a pretty solid plan.

I wasn't sure because when I was looking at the website, it called out that Eco207 would also fulfill a GEC. Also, what is the replacement course for HUM103?

I don't remember offhand what the replacements for HUM108 are. I think one is a digital art class? I think there is also a creative writing class, but I don't remember what that one is either.
