It's a new-ish thing for Bachelor's degrees, but isn't new for Master's degrees. Essentially, in the capstone course, you condense all of the knowledge that you've learned up to now and use it to write a paper or papers; usually in your chosen field. For BSBAs, you usually analyze businesses. For BS degrees, you might write about some scientific principle or something. For BAs, the idea is that you write a paper on whatever your major is, but this isn't strictly enforced at all schools.
