Many of us started out rusty lol. The tests are not nearly as hard as you're expecting because the info is there for you to learn (Instant Cert flash cards, study guides, and practice tests are all you need). So, imo, it's not so much that a certain test is harder- but rather it's more a matter of how well you can learn /retain. For me, studying for tests I had interest or experience in were significantly easier than subjects I struggled with. (I ended up taking math and science as a class because I just couldn't get it to stick in my brain)
Imo, I think you should start with something that interests you-at least sort of- or that you have some experience with, and then try that one first. If you really like reading, the analyzing and interpreting literature exam is the best choice. If you work in the business world or have some computer skills, go in that direction. If you're an avid people watcher, then sociology or psychology are good choices. After your first test, if it goes well, dive in! These are all multiple choice exams, and so really the answers are given, you just have to pick it out of the mix.
