So, the exams you took using the scores issued when you took them are what you'll present to EC when you apply - but - the current acceptance policy of when you enroll is what is in effect. So, in a nutshell, yes, they'll accept your exams but hypothetically speaking, say EC decided to stop accepting the Spanish CLEP, then the fact that you took it before that policy went into effect wouldn't get you credit for the exam...but if you were enrolled -and had the credit on your transcript- but then they changed it, you'd be fine and still have the credit.
