I think an important question here might be what your intended purpose is with the degree. Do you want something licensable, as in for a therapist, school counselor, or the like? If so, some of the options mentioned may not be the best choice.

American College of Education is a great choice for a masters in education. I recently completed the MEd in Health and Wellness Education. I enjoyed the program and am currently back doing a graduate certificate program. The courses are 5 weeks long and all follow the same format. Weeks 1-4 are basically a discussion board, paper (or project), and quiz. Week 5 is more of a reflection paper, discussion board, and longer exam. In my opinion very doable. You take one class at a time and after your first course you can request to take two courses at a time. You can also PM if you have other questions.
