I would guess 3-4 courses. I completed 4 courses my first time and didn't put much effort into it. This term I completed 8 courses and I finished before the term was over. They took me 7 weeks. I have 4 courses left and plan on finishing them in 4 weeks or less.

is umpi pass/fail graded or letter grade?

UMPI is all letter grades. You need to score an 80 to pass a class. For the classes that finish with a paper or project, you get to submit it as a rough draft for feedback from the professor. The courses that end with an exam, you have 2 opportunities to take it. So if you don't score an 80 the first time, you have a second chance. There's only about 5-6 courses that end with an exam.
