I'd switch Nutrition and Computers to the e-Pack version instead, making it much easier to work around your schedule.
I'd probably also devote the time needed - if you find that you can't continue the PT job, you can always quit later (I mean, why quit now when you have no idea if you need to or not). I'm guessing that you could also ask for a couple of weeks off if need be, rather than quit. Most places are so desperate for workers right now, they'd willingly allow you a little time off to finish school knowing that you're coming back.

I agree about paying for an extension.
Also I agree that Intro Psychology could also be a lot. Depends on if you have prior knowledge for that and/or Nutrition. Usually Nutrition is taken by nursing students.
Another way to make it easier is to take something you already know.

Like, if you've already taken College Algebra, taking Liberal Arts Math is a great idea - VERY easy. Things like this.
It's also a decent idea to learn some material ahead of time. For Psychology, for example, you could do the ModernStates course before the semester started. It gets you familiar with the ideas and concepts so that you're not learning all new material.

You can try to quickly do the PLA-100 course. Your main focus should be the cornerstone and capstone, if you need to extend the capstone date you can for a nominal fee. I highly would recommend you take the e-packs for the other courses as they're all offered by e-pack. You can take some time prior to the term to quickly review/skim the subjects for those three e-packs and quiz yourself, then get these 3 done at the beginning of the term...
Prior Learning Assessment - PLA100 isn't hard at all, quickly finish it.
Critical Information Theory - Cornerstone, it preps you for the capstone.
Intro to Psychology - Epack
Nutrition - Epack
Computer Concepts - Epack
Business Capstone - This is where you need to spend most of your time.

You can quit your job anytime.
You could give TESU a try for the first couple of weeks and see how it goes. You got a high SAT score, so I don't think you will have any problems doing TESU.
Btw, I strongly recommend the PHI-130 Introduction to Critical Reasoning course. There are no books to read. The exams are super easy.
