Yes, you can get the UoPeople degree recognized in Portugal, you can confirm in the DGES (Directorate General for Higher Education) website:

CHEA and USDOE acknowledges NA/DEAC institutions, having said that, not all institutions that are RA will accept them for transfer, the same goes for many international countries, you're looking at 80/20, 80 will not, 20 will... I would be careful with them as they will not get RA until at least the next two years at the earliest, they currently have 'issues' they need to resolve and have fixed beforehand.

I´m relying more on the fact that "University of the People" and "Bachelor" are already selectable from the list of universities and degrees, in the form to get "Reconhecimento Automático" (automatic recognition).
But sure, there could always be rejections in every process.
In any case, I was writing about getting the degree recognized in Portugal by the government, not about transferring credits to any other institution.

I just want to add a note that I was approved for a $600 scholarship!
Final degree cost $1,030 and I’ll be done in December!

That's awesome Tara! I'm glad you stuck with University of the people because it was the right choice for you. People on this board like to drag it for whatever reason, but it's a great choice for many. I took a class there and didn't always love the peer grading, but I found the curriculum and the quality of the teaching to be excellent. Besides, not everyone can finish a year's worth of classes in 8 weeks at UMPI.
P.S. What is the process for asking for the fee waiver for Sophia courses? I am considering returning to the University of the People and have done a lot of Sophia courses.

Coming back to this post to let everyone know that I start my last two courses for my Bachelors in Business Administration from the University of the People on January 23rd!
Although the student advising is not perfect, if you have a brain and can write an email, its all pretty seamless to resolve any issues. The only issues I incurred were with course registration in my last 2 terms. The new "learning pathway" is a bit wonky for upperclassmen and/or those who have transferred credits, but if you know what you need and what you should be registered for, you just write that out as if you are talking to a toddler, and all gets resolved.
I ended up applying and receiving a partial scholarship, so my total cost will be as follows:
Application Fee - $60.00
Transfer fee per course $17 x 10 - $170.00 (20 Sophia courses were FREE due to their partnership)
Course Assessment Fees $140 x 2 - $280 (Paid when courses are completed, not up front)
Course Assessment Fees including scholarship $100 x 8 - $800
BA Total @ UoPeople - $1,310
(plus whatever I paid at Sophia for 2 months with coupons.. I think $148)
If you transfer 90 credits, specifically from Sophia and Coursera (which is what I did), the least amount of time it will take to finish your degree is 1 year (5 terms). UL prerequisites prevent you from taking more than 2 courses per term. I wouldn't even suggest more anyway, because the courses are so writing intense, I would think it would be difficult for anyone to keep their head straight.
Also, they just had a visit from WASC and per the University President, Shai Reshef, they passed all the requirements for RA status, so its just up to WASC to confirm and solidify. Should be happening in February!
Taking this route, over the last year, and having a minimal cost for an RA degree was absolutely 100% worth it. The classwork was NO JOKE and I NEVER want to hear the words "in text citations or APA7 formatting" EVER AGAIN! But honestly, I am so happy I went this route and have ZERO debt. Plus, I am going to try and file for the US Adult Education Federal Tax Credit, so maybe it will cost me nothing!
