I completed my Bachelor's degree at TESU back in 2014, thanks to this forum. I'm now trying to help my wife earn her degree. She is a paralegal, and is looking to get the Bachelor in Business from UMPI. I would appreciate any suggestions on classes to take before enrolling at UMPI. I guessed at some of the transfer credits for her University of Phoenix and Community College credits. For some I have a question mark, because I don't know how they might transfer. Thank you in advance for any thoughts or suggestions.

College Algebra is NOT going to work for Math for Business. Only Math for Business covers that area. I'm not sure if any of the COM classes will transfer in as English Comp II, but that's fine. English Comp at UMPI is the way to go if you don't have equivalents already.

ETH125 Cultural Diversity will probably work for requirement 5A.
I'm guessing GEN105 will be an elective.
CRT205 I'm guessing will work for requirement 2A but not the others that would require ethics or philosophy.
Nutrition is good for requirement 3C, but unless she's really enthusiastic about Chemistry then she's still going to need Biology 101L from SDC to cover 3E. She'll also want Environmental Science from Sophia to cover 3D.
She definitely needs a foreign language, too. Spanish from InstantCert is recommended, unless she knows another language fluently enough to take an ACTFL exam.

First, she needs to figure out the concentration in business.
Then I suggest making a spreadsheet using the Wiki as a guide. Then post the spreadsheet to verify everything is correct.

From what I remember of UofPhx, COM220: Research Writing should cover English Comp II. I am not at all certain if Accounting for Small Business will count for Financial Accounting (sometimes those types of courses have some financial and some managerial, making it neither).
I would take the following:
ICC
American Government
Spanish
Sophia
Environmental Science
Ethics
US History I or II
Study.com
BIO 101L: Intro to Biology w/Lab
ACC 101: Financial Accounting (if you need it)
ACC 301: Applied Managerial Accounting (will have overlap)
BUS 303: Management Information Systems
Plus any of the following (Mgmt & Leadership concentration):
BUS 304: Leading Organizational Change
BUS 209: Mentoring & Leadership Development in the Workplace
BUS 306: Strategic Human Resources Management
BUS 309: Digital Marketing & Advertising
BUS 307: Leadership & Organizational Behavior
BUS 312: Advanced Operations Management
There are 5 UL courses you'll have to take at UMPI, so if any of the optional courses are too long or have too many assignments or whatever, I'd skip them and just do the UMPI course instead.

I also wouldn't worry about the concentration at this point, you can decide that later. The most important thing is to get the GEC and core requirements done, since those are the same for every concentration.

@andrewtn, does your wife belong to an union or have tuition assistance/reimbursement? How about commitments such as kids, volunteering, school, etc? How much time does she have to dedicate to studies? Is she more into alternative credit courses or competency based assessments/assignments? Does it have to be UMPI, how about the Big 3 or another competency based degree provider?

I don't find Lewis & Clark Community College on the transfer database. Based on my UMPI experience I think these courses will transfer as general electives at best. My old keyboarding class from my community college days didn't transfer at all.

It's strange that CRT205: Critical Thinking doesn't say it works for section 2 titled "Critical & Creative Thinking." I'm getting the syllabus and appealing this one.
Also odd is ETH125: Cultural Diversity not working in Area 5 titled "Global Consciousness & Intercultural Awareness." Learning Outcome "Students shall demonstrate an ethical awareness and understanding of the need to live and work in a diverse world." SMH I'm probably getting the syllabus and appealing this one as well.
For Comp 2, I'm going to get the catalog showing what Comp 1 is and what Comp 2 is (UofPhx calls them something weird) to show that your course is a Comp 2 course (the word "research" is the key to that one).

Why are you appealing? You're not the OP so I'm confused why you're appealing the transfers.
