Based on the information in this New York Post report, it seems likely an official with the National MS Society did unjustly railroad out the 90-year-old volunteer. Nothing this describes about her communication was offensive. I hope the society reaches out to her gracefully and apologetically and they can reconcile.
But this also seems like the sort of SNAFU that happens with or without "DEI policies." A 90-year-old volunteer could be railroaded out for miscommunication about an "email policy." That's not a reason not to have any "email policy."
The other side of the coin is that there are people out there involved with MS who use pronouns you or I wouldn't guess, and the fact that the National MS Society has a policy that supports chosen pronouns can be expected to make it less likely someone will unjustly railroad them out.

I am completely retired now. I am a U.S. Navy Chief Petty Officer (Retired). I am also a retired Department of Defense Civil Servant. I tend to look at most things through the lens of my experience. All DoD Equal Opportunity organizations are now DEI organizations. I just typed "Department of Defense Equal Opportunity Office" into my search engine. It delivered me here:
https://diversity.defense.gov/
Controversy in the field and practice is not new. I maintain that fairly instituted and managed DEI is good and necessary.

It seems you are describing an abstract, utopian view of what DEI could be, rather than how it is practiced in the real world.
DEI in the real world is used to discriminate against people and I don't know how you discriminate "fairly". Maybe you could explain that?
If DEI uses quotas or favoritism for hiring, then it's illegal.

People are not paying attention to the fact that companies are fleeing away from DEI. There are a lot of articles out there about this.
Remember Coca Cola's great DEI motto?

I agree that DEI hit its peak and is now on the decline. Oh ya, Coca Cola urged its workers to be less white. Lol.

A DEI policy often contains a lot of vague, feel-good language that doesn't hold much meaning. We understand the importance of treating people with kindness and avoiding discrimination.
What's critical is the specific language used regarding setting quotas or showing favoritism in hiring practices.
For example, if we examine Johnson & Johnson's DEI policy, we see the following language used: "Build a workforce that reflects the diversity of our communities."
To expedite the process, I've asked ChatGPT to explain this. Keep in mind that while ChatGPT is trained to promote DEI, it also recognizes the legal shortcomings present in many DEI policies.

https://archive.vn/UNRIW#selection-495.161-499.23 I referred you to the DoD DEI Office Website. Department of Defense DEI Plans and policy are available there.
All plans, policy, and nomenclature are subject to change.
Again, at least in the United States Department of Defense, the field once called Equal Opportunity is now called Diversity, Equity and Inclusion.

Google issued an apology and promised to be more sneaky the next time it implements racism.

It's interesting to me that while some may find your responses seem blunt, I find them so on-point, especially when reading the source materials. So blessed to be a student of business and STEM.
