It hasn't been brought up yet, but Coopersmith is adding a lot of new courses. I saw ones like Animal Assisted therapy, History of Icecream (yum),etc. On the NCCRS website. I asked recently (the day they were added to NCCRS) and they are adding them to the Coopersmith website.

Just an FYI that TESU brings in the Food Trucks course as UL; and lots of other things as UL as well (Psych courses most notably, although they go through those with a fine-toothed comb from what I've seen).
EC also brings in many Soc & Psych courses as UL, and many will work in their Psych degree. They're picky about history courses though, so don't know if these will work as UL there.

Sounds like some fun courses but I wonder what schools will accept some of those "fun" sounding courses besides TESU. It is difficult to find schools that accept coopersmith/nccrs to begin with and they do it is usually English 101, college algebra, etc.
But still even if you wanted to learn about the history of food trucks or ice cream purely for the fun of it, they set a price that doesn't break the bank. And its self paced with no expiration dates and its not like there are that many options to learn about the history of ice cream. If someone really wanted to learn about ice cream this really does seem like the best option I've seen even if you can't actually get college credit in the end.
