2 Bachelors = BLS & BA OR BABA - possible?

I am actually looking at options for both me and my kids. I think that I am going to go with UMPI, but that isn't an option for my kids due to their age (13 & 15). They don't know for certain if a business degree is of interest to them, and so they want to do a liberal arts degree in the meantime. They will get the significant discount in tuition through EU because their dad is in the military, so I think it is cheaper than UMPI, as they would definitely need 2 terms to complete the 30 required credits. I am just making sure that if they decide they want/need a business degree in the future, that option is open to them and fairly easy to get once they are 20. 

This is the degree plan I have come up with. The courses on the UMPI side that are green will already be done, so they will only need to do the residency courses and 4 classes from study. Does this look right? The classes that they have left for the Liberal Arts degree are the UL ones from study, some sophia elective courses, and then the 7 EU credits.

Several people on here have completed 30+ credits at UMPI in 1 session. The level of difficulty all depends on which courses you have remaining. You must be 20 years old for admissions to UMPI's YourPace program. If they are going to UMPI for 2 sessions, I wouldn't spend the money on Study since this is a second degree. 

Have you confirmed that health science is a liberal art? I'm going to say it's not because the health science degrees are not part of the liberal arts degrees. The health science classes you have listed are most likely going to be the applied professional credits. 

One thing to note. Degree programs do change. They're 5 and 7 years away from being able to attend UMPI. A lot can change in that time. When do they plan on enrolling at Excelsior? They, too, can and do change degree programs.

I have not confirmed. You are the first person to point that out, so I will have to look into it. Thank you for the heads up.

My guess is they would enroll for the summer I (cornerstone & info literacy) and summer II (capstone) semesters next year, as they will be done with the 113 credits no later than August. They can then apply for graduation.

Healthcare Organization & Management and Health Service Policy are not A&S courses so you'll have to choose something else.  Make sure you check SDC's website and choose courses that say A&S, Humanities, SocSci, etc.  Not Electives or Applied Professional.

Also, you cannot enroll at EU until you've graduated from high school.  You can take courses, but you can't graduate.  Not sure why you're going to graduate them at 14 & 16 anyway?  That seems very early.  You will have locked them into things, and you may not know if this is a good idea until later.  Your kid wants to go to a school for a specific degree - but the school won't accept them because it doesn't award 2nd bachelor's degrees.  They want to go to a competitive school for a master's degree - but the school won't accept them because they don't have enough graded credit.  Law school will be out of the question at most if not all law schools in the US.  I don't know - it just seems like you're making a big decision for them when they can't understand the ramifications of that decision yet.
