Of the exams you've listed - I'd go with Intro to Business as being the easiest. Again, as was mentioned before - it really depends on your experience level with (and general interest in ) the subject.
Also, you might want to consider Intro to Sociology or Intro to Marketing even though you don't have them on your list. Those are both relatively easy exams that you could probably bang out without dedicating huge amounts of study time to them. Just my two cents though - your mileage may vary.
