It's rampant among the students at the college I'm at and what's more, even some teachers are using it to generate feedback on student assignments. That's not all - students are successfully submitting stuff like recordings of presentations, where they have an AI animated version of their head talking, and AI samples of their voice turned into a text to speech voice - all so that they don't actually have to record themselves saying a presentation! (the students claim it is "accessibility" for people with "anxiety problems", trying to cover up the fact that there is no way for the teacher to tell if the student themselves did any of the work or not, and a presentation is normally partially judged on presentation skills, not just the content)
I agree that most of the time, stuff like essays and powerpoints are just a gathering and summary of facts or other people's work and do not really prove knowledge in the subject. Tests and homework can always be cheated on. You can graduate from a whole degree and still not know anything - either because you didn't do the reading/assignments or because the degree curriculum itself was bad it didn't prepare you for the field.
The only way to really stop a lot of this may be to require people to take classes in person, do their assignments live in class without technology, make assignments more hands-on, handwrite their essays, etc - however I really don't see that happening.
