You can do exactly what you mentioned, Sophia.org for gen eds/electives and Metropolia for transferable classes, you can also add to that the $1 USD Coursera month worth of ACE credits. Do a search and create a spreadsheet for yourself, link us to that from your google or one drive and also make sure to have it viewable and not set to editable.
