If you take Version 2, maybe. The credit recommendation says Version 1: In the lower division baccalaureate/associate degree category, 3 semester hours in Nutrition or as a core science requirement (6/13). Version 2: In the upper division baccalaureate degree category, 3 semester hours in Nutrition or a core science requirement (8/18 revalidation). You'd have to contact Coopersmith to be sure that you were taking the correct version (you should be), but there's always a chance that Excelsior will count it as the LL credit recommendation. I would suggest maybe an UL Psychology course from Coopersmith. Others have reported Coopersmith's Psych courses to be (relatively) easy.
