Just Beat Cancer, Researched Colleges 4 Monthes, What Do You Think of this Plan? :)

I just beat cancer (adrenal) and it wiped out my 20’s (hmu if you ever get it, I have a lot of resources, I killed mine) but I have 118 CSU transferable community college credits to show for it and have been going through these forums the last few days with one year of the Pell Grant left. The cancer lasted 8 years and I used the pell to stay financially afloat for 5 of them.

Trying to get two bachelors degree to not have to take the CSETS (California Subject Examination for Teachers) for entry into a multiple subject teaching credential and then adding on a single subject social science teaching credential after doing the multiple subject. 

AB 130 new bill allows this as long as the major is exactly worded as a degree in Liberal Studies for entry into a multiple subject credential (K-8) and a second degree in Social Science (what I actually want to teach but is very hard to get a job for) grades 8-12 for entry into a single subject credential program (they last a year)
 
I want stability financially and the ability to teach k-12 not just either grades  k-8 or grades 8-12 so as to always have access to a job during recessions/hardship/relocating in public or private education
Reason I want to do this fast as I can is that we want to have proper financial stability to have a baby (LATEST) by the time my soon to be wife is 32, shes 28 now, (also a teacher)  I have no real financial contribution yet as far as real salary, and will substitute teach after getting the first bachelors from TESU (or wherever makes the most sense)
 
So far my plan is TESU Liberal Studies with a concentration in Social Science so that I can then use credits from those to transfer into:

National University for a second bachelors in Social Science


Or hopefully someone knows of somewhere else faster - National University only allows you to take ONE class per month. You can technically take 2 after 3 monthes of having a 3.5 in all coursework but have to pay full price for the second course of like 1688, no scholarships applied, no FAFSA. Yeah. Rip. Forget that.
 
But that’s my plan, the noob who has 4 monthes of research into all this,

 
If anyone knows of any better online colleges for this plan, im all ears.

How do I take what I have now – (do Sophia, SDC, U of Idaho etc, then TESU as fast as humanly possible,
WHILE doing and putting the classes below where they should be best in a degree plan for  this goal?

 
Heres the classes for the National University Social Science second degree major:

I ALREADY HAVE AN NU DEGREE plan - i would have attached my transcripts and the plan but didnt see a button to add files in DM's -  and dont need any others classes except the ones below (and in information literacy course im asking them if the edx microbachelors that works at TESU will work for theirs)

Franklin University apparently also has a program that might be WAY faster than doing NU after TESU for 10- monthes but I don’t know what im looking at class wise at the bottom. TESU lists it by each section and gives alt classes you can do.

POL 100 Intro to Politics          (I think my comparative politics or International relations would work here?)
POL 201 American Politics        (same as above?) or do I need to do this one somewhere else
SCI 300 Geography                 (does 300 mean its not an undergrad course? Intro wouldn’t count?)
ECO 203 Micro Econ              (already have)
ECO 204 Macro Econ              (already have)
 
Social Science Degree CORE Requirements
(ill have this verified by NU but what i think these *have* to be taken at NU as it says
“students are required to take courses in the order listed”
 but who knows,
 
regardless if you know anywhere like Sophia, U of Idaho CLEP etc,  where I can take these now, im all ears.

To anyone who weighs in on this, the fact that a community like you all exist is just having me in awe.
