I did find that an older version of Excel (Excel 2016) does work, although there are some differences the course does seem to acknowledge them in the instructions. Luckily my Pierpont student login became active today and it looks as though it comes with Office365 access, so I should be fine for the duration of this class.
Thus far it seems like instructions to create a workbook followed by a quiz on the contents and display of cells in the file you created from the instructions. Multiple attempts allowed on quizzes, and it seems that so far once you complete one section you can move on to the next without having to wait so it seem pretty self paced. I haven't made it to the first exam yet.
