UMPI's BSLS with a minor in Project Management is also a good one. Take the following:
Sophia
Ethics
Environmental Science
Any non-duplicate course
Then transfer everything to UMPI, and take 10 courses there:
Foreign language requirement
Hands-on art requirement
the 6 minor core requirements
any 2 courses that will go in free electives
And you're done.

Between the 2 schools, it's a toss-up as to ease, speed, and price - very close. They should both take all of your courses, there's tons of space in free electives for everything you have in either degree plan. I think the main reason to do UMPI is the Project Management minor.

If you want a true business degree, you will throw out a lot of credits, and have to take the business core. A lot of that can be done via Sophia and Study.com, so it's not terrible, but it's definitely not going to be as fast as a BSLS/BLS degree, which I would call a "business lite" type of degree.

Furthermore, I noticed you may be eligible for Pell Grant/Fin Aid... are you going to apply?
Final thought, since you're a decade younger than me, I think you should do a double double at TESU! Haha, get the BSBA for the check in the box degree, and get a BALS NSM with Bio/CS/Math for your future Masters degree. Take 16-18 residency credits using your Pell Grant and only take courses that can't be transferred into the degrees... and that is *IF* you got the energy/money/time.
