They're actually super upfront about that. If you tell them you want to do English and Educational Studies Minor, they'll mark your plan to include both and you're not done until you finished the requirements for both.
That's great! I'm glad that they're easier to deal with than TESU. With TESU, it sometimes feels like you have to "trick" them into letting you get a degree.
UMPI wants you to be successful. They care about their students outcomes. I think that matters a lot
