If you are still in MD, it looks like there are a bunch of Community College options. I only reviewed a few schools, but CCBC and Anne Arundel CC both have classes in Spring 2021 that are 100% online, no specific meeting times, no prerequisites to get in your way, and look like they might fit your needs. Look for courses under the Human Services or Human Services Counseling subject areas.
