I would say the best place to start is Analyze and Interpret Literature (It is six credits). You might also look at something like Technical Writing (a DSST test) which is humanities as well.
For that diversity course you might want to ask your school what would fulfill that requirement or else pre-approve a test like Human Cultural Geography (DSST) for that. That one will be tougher to decide on until you can figure out what your school wants.
Math you'll want someone else to recommend a course I think since I haven't done those. College Mathematics CLEP (6 credits) is supposed be the easiest of them but also requires a variety of knowledge too.
Electives. Well you start by trying to find a strength of yours and going with that. For me I would take some easy business tests (Supervision DSST & Intro to Business DSST). You might also like doing the computer tests (Intro to Computing DSST and Information Systems and Business Apps CLEP) since they have a good overlap. This site among others will help you prepare once you decide which tests to do, just make sure to do your research on what your school will take or if they only taken certain tests or limit the total amount.

My completed "non-traditional" credits include 27 credits from CLEP, 30 credits from DSST, 6 credits from ALEKS, 19 credits from FEMA courses including PDS, 3 credits from NFA courses, 10 credits from ACE Workplace Training, 3 credits from a TESC TECEP exam, and 3 credits from a TESC PLA course.
