Do you think UMPI will see my Physical Geology+lab - GEL150 ( Taken at community college) as fulfilling the science requirement under the Bachelor of liberal studies-management minor degree?

It will fulfill the physical science and the lab science requirement. I had the same thing.

It will fulfill the physical science requirement, but you'll still need biology. Take Human Biology at Sophia. Or, I think Intro to Nutrition would also count. Whatever sounds more interesting to you.
