My nephew has been told he needs only 1 credit in a math or science for his Pierpont AAS. He's looking at Sophia Earth science but I thought I'd ask if anyone knew of a quick 1 credit stand in....? He looked at Sophia's intro to Statistics for 2 credits but Earth Science would likely be better for him. I've done some searching and can't find anything.

Sophia has environmental science, not earth science.
I don't think there is another course somewhere else for 1cr that would be quicker than taking environmental science at Sophia.

Especially for alt-credit, it's usually faster and cheaper to find a 3-credit course than it is to find a course for only 1 or 2 credits.
Either Environmental Science or Human Biology will probably be faster & easier than the 2-credit Stats at Sophia.

I also suggest just taking a 3 credit alternative credit course instead of searching for a 1 credit option. If you have a Sophia.org subscription, yes, I would agree with the Environmental Science course from Sophia.org... Having said that, if the membership has run out, then InstantCertCredit is only $20/month and $15/proctored exam. There are other science options if you wanted.
