Sociology, Astronomy, Social Science and History, Technical Writing. All these aren't "easy" but require minimum studying. I would take the English CLEP with Essay to begin with. Good Luck!

To add to Larry's list, if you're ok at analyzing and you are decently well read, then Analyzing and Interpreting Lit shouldn't be too bad.

I agree with PatsGirl1. The A&I Lit was the easiest one for me so far. I thought the Sociology one was pretty easy too.

Intro to Psych is pretty easy. You can do it with only instacert and ambition.
