Central Texas University.
Why?
University of Central Texas: Cumbersome to say, possible confusion with UT. Can be seen as attempting to ride on UT's name recognition.
Texas Institute of Technology: Unless it is positioned as another MIT or GaTech, an "... of Technology" school in central Texas risks sounding like a combination agricultural school and vocational school.
Lonestar State University: Not bad, but has the issue someone else mentioned about Lonestar in the name.
Texas Military University: People can misunderstand and assume it is a military academy, or only military can attend (and therefore won't apply), and has name association with for-profit AMU which doesn't have a very good rep.
With Central Texas University you have a short name with a nice acronym CTU that rolls off the tongue, have "University" in the name without being cumbersome, and don't inadvertently mislead potential applicants into thinking the school is vocational or military-oriented.
Also you get to be associated with the greatest member of CTU: Jack Bauer.

2013 switched major to CS, then took a couple years off suddenly.
