Fair enough, if only getting the AS in Comp Sci. But Calculus I from Sophia should still be a cheap & easy way to get more math credits for the AS in Mathematics.

The AS in Computer Science and AS in Math are definitely easy associates to pick up on the way to a Bachelor's degree. I don't think the Meteorology one will fit?
In addition to the regular gen eds (Algebra is included here), Math requires Calculus I (OP has Calc II, but I would take Calc I from Sophia because it should be relatively easy after taking Calc II.) + 15 additional math credits. Assuming that the already-taken Stats is UL, I would suggest the following:
- College Algebra (gen ed requirement, Sophia)
- Calculus I (degree requirement, Sophia)
- UL Stats (AOS elective, already taken)
- College Math (AOS elective, already taken)
- Calculus II (AOS elective, already taken)
- Introduction to Stats (AOS elective, Sophia) - Will not overlap with UL stats.
- CSMLearn (fast/easy/cheap) or Discrete Math from Study.com (Should be easy after UL Stats & Calculus, looks more impressive on a transcript)
For the AS in Computer Science, all that is needed is 18 credits in Computer Science-related credits. Discrete Math would go here, but it also looks like plenty of CS-related credits have already been taken. TESU counts these two degrees as a single degree with one AOS, if taken together, so I'd do them both.
The AA in Meteorology requires:
A. Earth Science
Probably already taken? If not, Earth Science 101 from Study.com
B. Meteorology
Earth Science 104: Intro to Meteorology from Study.com
C. Disasters (EAS-201 The Science of Disasters recommended)
I think this would need to be taken from TESU, possibly as part of a 16 credit term.
D. 6 additional credits of Meteorology/Earth/Environmental Science credits.
Already completed.
Instead of the AA Meteorology, perhaps the AS in Business Administration? Most of that can be completed with Sophia. Most Sophia courses can be completed in just a couple of days.

Davar, Study.com, or Saylor (depending on how confident you are in the subject)
C. Business Law

Sophia possible, but might choose Study.com for ease. UL Management isn't needed here.

The Computer Information Systems certificate might only require Systems Analysis & Design from Study.com. Might need Intro to IT from Sophia, depending on how your current credits are brought in. Possibly not worth it if already-taken classes don't come in as relevant CIS courses. 9 credits in CIS electives required.
The Computer Science certificate would be more work at this point than the AS in Computer Science. Don't bother.
If you get the ASBA, the Operations Management certificate would require 2 additional courses: Management Information Systems (Davar or Study.com) and Operations Management from Study.com or Saylor. The MIS course would also work for the CIS certificate, so could be worth it if you're 3 credits short of the CIS certificate.
I think maybe you misunderstood what I wrote. I used the example of taking the TESU resident credits toward the associates in meteorology (i.e., easy lower level classes) to gain residency if they would rather not take the UL credits toward environmental studies and alt credit those where possible.
The whole point was that the AA Meteorology would require a few classes (3 based on my husband's evaluation that has almost the exact same classes) ^^'
Sophia's Environmental Science will be faster but not cheaper if they are already paying for the college accelerator to take Biology. You get two exams included, so the env. science would be fundamentally paid for already unless they did want to take discrete math toward the AS in Math/Comp Sci.

I wouldn't waste a Study.com slot at effectively $100 an exam (presuming you don't complete additional courses in one month and pay the add-on fee) on something that could be got elsewhere cheaper tbh, since taking Comparative Politics on Study.com would then mean a $100 Sophia subscription to pick up Environmental Science. Maybe it doesn't and I am misremembering though.
I cede the point on going the Sophia route if picking up the AS in Math and using Sophia Calculus 1 as an additional math class though. If OP wanted to add the AS Math/Comp Sci it could be better to not use the appeal for higher level replacement with Calc 2.

Nope, InstantCert is gone. At least for American Government & Spanish. (Other InstantCert classes will be going away at the end of the year.) Choices are currently Comparative Politics @ Study.com or Saylor. Saylor will be significantly more difficult because everything is based off a single exam.

It seems to me that the OP could gather up enough credits for the TESU Computer Science in about 3 months, working 20-30 hours a week on the degree.
Then once you do that, maybe you're only 1 month away from a double major in Business Administration.
And oh BTW, one more course and you have a free Associate's in Math.
And then what about science, should we go for that as well? Or do swap out computer science for science, then pick up the free associate's degree in computer science.
TESU does have the double major/degree advantage if you go that route. But you can also choose a single degree.

I completely missed that. Oops. I would probably still CLEP it for free using Modern States personally, since TESU does take the CLEP toward Civic Engagement. I understand some people like it not being one exam or bust though.

Considering how close @dillpickles is to multiple TESU degrees, I would definitely recommend applying there and sending in transcripts. (If credits are from more than 2 schools, also pay for the $50 Medical Terminology TECEP.) This would allow access to the "what if" tool to compare different degree options.
Also, you can have multiple degrees & certificates added to your degree plan so that you can track progress more easily. So, if you think "yes to environmental science, maybe to Computer Science and BSBA CIS", you can add all 3 to your account and decide later.
If you DID get the BA CS and the BA Environmental Science at the same time, TESU would count that as ONE degree. Throw in the BSBA CIS for only slightly more work and get three degrees for the price of two.

Can you clarify what you mean by TESU counting it as ONE degree (vs two?)? That would be pretty epic to get CS, ES, and CIS - I'd at least feel like all my time spent in college was worth something
Let's say I go this route. What can I take right now using Sophia to get a head start while I go through the process?

What does this have to do with you? When you apply, you only get 2 credit evaluations. If all of your transcripts don't arrive at exactly the same time, TESU may only process 2 or 3 transcripts before those evaluations are used up. In order to unlock unlimited evaluations, you have to become a fully enrolled student. There are two ways of doing this: taking a class, any class (expensive) or paying for a TECEP. The Medical Terminology TECEP happens to be the only 1-credit TECEP, so it's the cheapest way to do this. You don't have to actually pass (or even take the TECEP), but I do recommend making an attempt with the exam. This is simply so you are familiar with the ProctorU proctoring environment that Coopersmith & TESU use. Again, you don't have to take the TECEP if you don't want to/don't have time, but I definitely would.

If you were to graduate with the BA Environmental Science, then come back for the BA in Computer Science later, TESU would count those as two separate degrees.
TESU allows you to get 2 degrees total per level, with up to 2 AOS each. Certificates are unlimited. So...
- AS in Computer Science + AS in Mathematics = Associate #1
- AS in Business Administration OR AA Meteorology = Associate #2
- BA Computer Science + BA Environmental Studies = Bachelor #1
- BSBA CIS = Bachelor #2
- Certificate in Operations Management; If you do everything above, this will only require a single additional course in Operations Management from Saylor or Study.com
- Certificate in Marketing; not free, but you said you're in Marketing, so might be useful. Could also add Marketing as an AOS for the BSBA and get the equivalent of four Bachelor's degrees at once.
The Marketing certificate would require 5 additional Marketing courses beyond the Intro to Marketing required for every BSBA. At Sophia, I would do: Ancient Greek Philosophers (I think this is technically useless for your degree plan, but it makes Intro to Ethics significantly easier). Intro to Ethics. Environmental Science. Algebra, Calculus I, Intro to College Math, and Introduction to Statistics. I would apply today, if at all possible. Pay for the TECEP and send in all of your transcripts. Depending on how your previous schools send their transcripts, your evaluation should be completed by the 1st or 2nd week of next month. That will let you see where you stand with each degree.
When your evaluation is complete, take screenshots (Fireshot recommended) of all 3 or 4 degree plans and we can help you with further class suggestions.
