I think I might contact an advisor and see if some of those genealogy classes at BYU could count towards a concentration? I know it would be unique, but they are classed as History in the 300 and 400 ranges so maybe they would count towards upper credit. Can't hurt to ask. Otherwise I'm going to have a hard time getting enough upper level credits to fufill the concentration. I could go with sociology/history/literature individual studies but I will still be 3 upper credit hours short. Unless I'm so tired I'm oblivious.
I've transferred everything to a spreadsheet to make it a little more manageable. I'll work with it a little more and get some advisement on it. And in the meantime I can start studying for some of the general ed stuff.

Man $10,000/year in tuition reimbursement! Where do you work and are they hiring? I would be off to Harvard Extension or John's Hopkins myself....but I do get your predicament.
Do you have any existing credits or starting from scratch?
Will your employer cover credit by exam costs or only actual courses?
Your concentrations can easily be split, 15 credits plus the capstone in your 1st concentration, at least 9 in the second with room for at least one UL elective. Use DSST or other cbe then fill in with a few self paced courses from CSU Pueblo. Remember you can use FEMA fre of cost and at your pace as electives.
Read through the degree plan in my signature, it details my thoughts on an AS at COSC.
$10,000/year....I'm just shaking my head in disbelief. There is no way the family situation can be rejiggered to allow you to take advantage of essentially winning the educational lottery?! Very few people have such a situation....think hard before passing it up.

If the BYU courses have a history prefix they will likely carry over as history. How many are there? What level? Got a link?
If there are enough if the right credits you probably have at least a secondary major right there.

I too am kind of flabbergasted at the $10k per year amount. The federal tax limit is $5,250 (for employers to get the deduction for), has been since 1996, so the majority of companies I see that offer TR have that as their annual maximum. In 2002, they added graduate tuition to the law (previously it was only for an undergrad degree).
The only things that I do see outside of that is the certs that they pay for IT people to keep current. Also teachers and others who have to get a certain number of CEU's to stay current on licensing. Things like that. Those don't fall under federal tax guidelines for tuition though. They are a different beast (usually certifications or licenses, which can be paid in full by the employer).

$10,000/year is roughly twice the value of a PELL grant!
I'm not sure what the full value of the GI Bill is, but I know people will risk their lives to get it.
I would go get my Doctorate with that kind of cash!

Thanks to everyone for all the help! SOOO many helpful suggestions. Since the BYU Independent Studies classes will count as history, I think I will go ahead and try for a Liberal Arts Bachelors in History. I also really liked the CSU Pueblo program so I will keep that in mind if I need it. Some of the genealogy courses I wanted to take I crossed off the list, because they have a weird schedule for how they are offered (every odd year, only in the fall, etc).
I know, I know... I have a lot of tuition reimbursement available. But right now I need to be able to work on this at my own pace. I haven't asked yet about reimbursing credit bearing exams but I will ask when I do in to talk to the HR Specialist. I do want to try and get done with this BA quickly, so that I can move on to a Masters, and that is where tuition reimbursement will come in handy! Also the reimbursement is graded, so I want to be really, really careful I'm making only A's if possible for the maximum refund.

I looked over your plan, and you have a great start. I have some comments and suggestions.
College Math and Biology should both be listed as 6 credits.
I don't see the Cornerstone COSC course listed. It is a required course, similar to an English composition course, but it is not difficult or time consuming.
You have two more upper level courses listed than is necessary. Only 30 credits are required. These could be replaced with cheaper/easier lower level alternatives. (By the way, Substance Abuse DSST is a relatively easy upper level course for your upper level, liberal arts electives.)
US History 1, Western Civ. 1, and World Conflicts can also be listed under your concentration (although they will only count toward your total credits once).
Introduction to Computing does not count as liberal arts credit.
To answer some of the questions you listed on your plan:
Yes, history courses do count as liberal arts.
Your general education credits look fine as listed since you have met all requirements.
The Capstone (and Cornerstone) fulfill the Information Literacy general education requirement.
I don't know what the future holds, but I know Who holds the future.
