This thread has pretty good advice, though some of the courses listed have since added touchstones (essays): https://www.degreeforum.net/mybb/Thread-...on-courses

Sophia allows you to have two courses open, so it's a good idea to keep a slot for a class without touchstones, that way you are not stuck waiting for grading. Another good idea is to reach out to the Learning Coach help line to add another course, if all of your current courses are currently waiting for grading of a touchstone. Keep in mind that all of the exams are open-book, so it's good to have the PDF open.

This thread has course reviews from various providers (including Sophia) from forum members (linked from later pages, as reviews more than 2 years are very stale): https://www.degreeforum.net/mybb/Thread-...#pid392516

I would say don't wait to sign up with Sophia since it's free.
https://www.sophia.org/

The first lesson of each course is free. You can also download the entire course in all subjects as PDFs for free. Skim through the PDFs to get a general idea of the course and to gauge how difficult it might be or whether it seems interesting to you.
