Hey there, I'm a professional self taught software engineer who is looking to get a degree behind my back to further prove my ability to employers.
I was wondering what the easiest, quickest test based route to achieve this would be. I've looked at Excelsior, but I'm still pretty ignorant on the best methods. For what it's worth I also live in the UK which may or may not be an issue.

Have you got any A-levels or any postsecondary credits? Those might be worth US college credits.

I've got the equivalent of a levels from South Africa, but nothing that's relevant as far as I'm aware.

If you have a lot of IT certs, you might be better off going for a degree from Excelsior. Otherwise, I would suggest following Sanantone's BSBA in General Management from TESC. Lately a few people from the UK have mentioned that courses from Straighterline are very manageable, so you might consider looking at those. Good luck!
