Do you think a PLA would be more work than a whole CC course?
Yes, the PLA will be much more work than a course. There are multiple papers, documentation, letters from managers, etc. I was told that rarely does someone really want to take the PLA because it is soooo much work.

It actually doesn't look all that bad from either a cost or amount of work perspective:

It seems like maybe you could get by just mapping the UMPI syllabus to the Study.com syllabus, but maybe I'm misunderstanding what they're looking for? Also, are UMPI syllabi available somewhere?

Read Step 3. The supporting documentation part is multiple papers from what I've been told. Letters from managers were also a requirement. I know the screen says it's optional, but that's not what I was told by 2 staff members. There's more to do than just mapping. Mapping is 1 part of the portfolio.
Each professor has their own syllabus. UMPI doesn't create them. You may find a few old ones online. They may or may not help. There's usually very little info on them that relates directly to the course work.
I think you're better off trying to get the IBM Front End Developer Certificate from Coursera and trying to get that to apply towards courses in this minor.
