my unofficial eval from EC says I need "at least 3.00 credits in Humanities electives"
Which test would be the easiest for me to do to satisfy this? Ethics in america maybe?

If you haven't taken the Analyzing and Interpreting Lit CLEP it is actually worth 6 credits in Humanities and requires almost no study. If you do well at reading comprehension you can pass this easily.
I don't really know much of anything about Ethics in America but the Intro to World Religions DSST is supposed to be pretty easy with some light studying.

I just got done taking Analyzing & Interpreting Literature. I took it completely cold, and finished it with 2 minutes remaining. Scored a 67.

Ethics in America does count as a humanities credit and also applies to your ethics requirement with EC if you have one (at least for business but if I remember correctly from posts not for psych). If you login and look at the guide to credit by exam you can see what does apply as humanities. In case you cant get to the pdf file I will list the cleps & dssts. I took a&i lit (6 credits), american literature (6 credits), fresh comp w/o essay (3 credits) and ethics in america (3 credits) none were that bad to take. I actually had 27 credits in humanities from brick & mortar classes as well. Hope this helps.
