I just signed up for the course and curious on the AE assignments that I can forward those to the instructor to make sure I'm doing this right. I'm afraid if I send it in he will grade in instead of giving feedback.

I wouldn't expect that to happen. I sent my first two sets of assignments in with a note that said something to the effect of, "Here are my AE's 1-4. I think I'm on the right track but I would like you to take a look at it and let me know if there is anything I should take another shot at. If they are all full or near-full credit than there is no need to respond." That seemed to work well and I didn't have to redo any of them.

I just sent in AE1 and see what he says. I need to start on chapter 2 and get AE2 and 3 done.

That's what I did most of the time when I wasn't sure if I had fulfilled the requirements of the assignments, and as in barcotta's case, I never had to redo them. I know that figuring out what is required exactly can be a bit of challenge at times, but the professor is definitely very flexible, not very picky, and definitely there to assist you when needed.
I had a great experience dealing with him, I remember he was very responsive and efficient and I hope you'll get to enjoy the course the same way I did.

Yup, he responded to my first assignment and just said not to overwork these exercises. I just didn't know what was expected and didn't quite know what he expected.

The Excel OM is great, I was able to get most of my questions completed with it. I copied and paste my results onto Word.

The professor is very good to work with. Very fair. Me and Excel had a couple of issues, he took me to the toolshed a few times. Excel is not my friend.
