There's really no reason to create 3 threads of the same question in 3 different sub forums, I'm deleting the other two duplicates...
To answer your question, you may want to review the the following info:  It'll answer almost all your questions.

For UMPI, I would take everything you can first with Sophia.org since they're cheap, easy, fast... If you require more courses, extend that, and then work on other ACE recommended credits either from Sophia.org or InstantCertCredit, Study.com, etc. If you're going for UMPI, you need to make sure you have a lab science and language course.  So, skip StraighterLine altogether... 

Now to get you started: 1) Invest in a second monitor for easier multi-tasking and answer search.
2) Subscribe to Sophia.org and use 1 monitor for quiz/exams, 1 monitor for looking at pdf/texts.
3) Complete as many Sophia.org courses as you can that don't duplicate, up to 20-25+ courses.

If you need to extend the membership, it's just $79/month for 2 courses at a time, unlimited courses.
Once done with the max of Sophia.org courses, you should update this thread with a new evaluation.

It's not recommended to take English Comp at Sophia; take it at UMPI. Other than that, use Sophia to fill as many GEC requirements as you can (see Link 3 in bjcheung77's post). You can also take a few extra courses for electives.

For your lab science requirement, you're going to want either Chemistry 111L or Biology 101L from Study.com (if you do chemistry at Study.com, you'll need Human Biology from Sophia. If you do Biology from Sophia, you'll need either Chemistry or Environmental Science from Sophia).

For your foreign language, do you know any foreign languages? If so, take an ACTFL exam from LanguageTesting. If not, Spanish I from InstantCert is the way to go.

I also appreciate your questions, but did you follow through with Rachel83Az's post? Did you click on the links on my previous post? All the links shows you EVERY course that you can take towards ALL the general education courses you need. Is there more to ask besides that same question? It only takes you a few seconds to click the link and a few minutes to review those pages... What's stopping you is yourself, click it, read it, create your spreadsheet and post EVERYTHING into a spreadsheet for reference and tracking purposes. It's your homework to get yourself started, asking is great, but you're not putting the effort into this...

I'm a bit confused as to why you would take both Intro to Ethics and Ancient Greek Philosophers. Don't they both fulfill 2A, 2B, 4C, 5D as per the most current transfer chart?

You need at least 40 GEC credits. With how many courses fill multiple GEC requirements, it's possible to be significantly under 40 credits. In most cases, it's better to be over by a class or two than to have to take more classes at UMPI.
