ss20ts has this pat down for you to the dot! This is exactly how I would plan this out as well, so get your Sophia.org, InstantCert, Study.com courses complete. You can then apply to UMPI and decide if a Management or Project Management minor would do, in fact, just like ss20ts, you can have both if you want, it depends on the number of courses you would like to transfer into UMPI and what courses interest you at UMPI. Take your time deciding while you're working on the Sophia courses.
The reason I mention this is because you need 30 credits, the minor is only 18 credits, 9 credits duplicate between the two, so if you complete both, it's 27 credits right there, you can finish English I & II and have met your residency requirements, the rest can all be transferred in. Further to that, don't rush on finishing in 1 term, think of it as an investment, you want more ROI/Value after you finish, you get the $ back after finding a better job or getting a raise, etc.
