I've got a pretty good grasp of everything except the Hotel management stuff but it never hurts to go back over some of the literature.

There are many posts in the Doctorate degree discussion forum about places to get said degrees.
The one I have seen the most in the US is people using the ENEB/UI1 masters for a DHA at Virginia University Lynchburg
Here is what the new downloads look like in the ENEB Campus Portal where students can download their various degrees. I have a past Master in Project Management, however with the new updated ENEB degrees I completed along came the Diploma in Innovation and Project Management automatically into my downloads. For us "legacy" students it was like the specialization we would automatically get in Executive Coaching and NLP. The option to earn the Spanish for Business still applies.

Small update: I finished the MBA + Project Management exam with a passing grade. I also sign up for the HR masters and the Hospitality one, but those tests aren't showing up correctly so I need to contact the school.
I know we're all here for basically the same reason but this is such a big deal for me. I grew up as poor white trash. No power or running water most of the time. Nobody in my bloodline even finished high school. My last living relative is in prison for attempted murder and meth. I really did grow up as quintessential trailer trash.
And now I'm on the other side of the planet and have an MBA. This is huge for me. This forum is amazing and thank you so much for the past 10 years of guidance.

Congrats on getting this far, it's great you're persisting and pushing forward with your education. These are stepping stones towards an inexpensive Masters as ENEB will be evaluated favorably as advanced Bachelors or Graduate certificate/credits. It's also great that you've got a hubby who supports you, in addition to any other resources you have... Have you decided to maybe 'transfer' these to finish a Bachelors & Masters combo later?

Where I live now it is recognized as a full Master's Degree without a foreign evaluation (unless I've misunderstood something), and if I head back to Japan I won't need it for immigration but it will be recognized as a masters for job applications. I may eventually go back and finish the last couple classes at TESU later but it won't help me get a job and it'll just cost a lot. At the moment it's not a priority. If I do it later it will just be for my own personal fulfillment.
Now you've got me worried lol. Does the test method evaluate differently than the traditional route? Maybe I missed something...

In regards to the agile test option, the evaluation should be the same, I don't recall any changes, there was a post earlier mentioning Validential evaluations may not be as favorable for some states education departments (for teaching purposes), other than that, the recommended NACES options on the WIKI should still be valid.

I'm in Denmark now, looking to either go to Germany or back to Japan so I think I'll be okay. Looks like Germany is more favorable to Isabel than to TESU according to the anabin database lol. I don't see myself going to North America any time soon, but if I did I'd probably try Quebec and go for another passport.
