Average income after graduation looks like 33k as per google. Whereas Excelsior is 54k. I wonder why? I’m deciding where I’m going to go right now.

Those statistics probably include traditional students. The typical UMPI graduate is an early 20s on-campus student from rural Northern Maine, taking their first "real job" after graduation in rural Northern Maine. The typical Excelsior graduate is already mid-career.

No matter which school you choose, your situation will not be much better. At best, you can expect a degree to check the box that allows a company to hire you that wanted to hire you already. At worst, it will be useless and cost you time, energy, and money because many companies will hire people without degrees. If a job is your goal, then I highly recommend that you work that goal as your top priority and only work on the degree in your extra time. Or possibly move it up in priority if you find that the companies you want to work for require a degree.

Having a UMPI bachelor’s degree didn’t land me a "better" job, but it did open up more opportunities since I wasn't getting auto rejected anymore the second I apply. The power of a checkmark degree (Both UMPI and EU) is that rather than being instantly filtered out by our robot overlords, a human overlord would now reject me or ghost me. Joking aside, I track my job applications, and in 2023, I noticed a 255% increase in initial phone interviews after graduating in June compared to before. The income and job titles were similar to what I was interviewing for before earning my bachelor's degree, but there was a wider pool of companies and interestingly, industries. If you don't have relevant work experience (to your goal job), I recommend not rushing to graduate and try to squeeze in an internship or two.
If CPA is the goal, both EU and UMPI should be fine but make sure you should look into your state's requirements for the CPA exam (Accounting courses needed to sit for the CPA exam, total credits needed to apply for certification, relevant work experience, etc.).

This plan should take me about a year I assume. That should give me a really strong ability to find a job. I have until September until I need to find a job. So, crunch time!

While I've heard CPA licensure is tough, I highly doubt you need to get a bachelor's and 3 masters. In fact, I don't think any state specifically requires a Master's degree. Also, it will take longer than a year.
The UMPI BBA Accounting should allow you to sit for the CPA exam in most states since it has 24 credits worth of accounting credits (double check if it works in your state). Once you pass the exam, you need to apply for certification. You need 1+ year(s) of work experience in accounting verified by a licensed CPA (number of hours and the type of work required differ per state). You also need to verify the required total number of credits (usually either 120 or 150) and if you need to take an Ethics exam. You also need to check if the state board allows ACE credits. So before you make any more plans, look up your state's board of accountancy website and read the current requirements and policies. Email them directly about UMPI and if the board accept ACE credits.
