I’m ultimately planning on finishing my bachelors through WGU. But hypothetically if I were to pursue an Associates degree at one of the Big Three(probably COSC), how well would it transfer into WGU?

I think you can transfer up to 75% of credits for bachelor's degrees at WGU. It would be better to take exams with ACE accreditation and try to match the specific general requirements WGU has. I don't think WGU accepts NCCRS. When you've finished with your exams, apply to WGU. You can't transfer in additional credits later without reapplying.

You can apply and still transfer in credits, you can't enroll (AKA orientation and starting classes).

Even though they take a block transfer, you need 60cr for an AA, and WGU will only apply about 25-30cr towards the GE portion of the degree. So unless you are very strategic in which additional courses you take on top of the GE COSC requires, and get a bunch of business or IT courses in there, you'll lose more than you gain.
Instead, get 90cr inexpensively through the methods we recommend, and fill up that degree plan, leaving 30cr that are hard to find or inexpensive. Then you can finish in 1 term.
