Are associate (AS) degrees from Excelsior recognized by Universities for transfer?

You don't transfer to a master's. You earn your bachelor's, then you apply to a master's program. It's like starting over. If they like your application, you're in.

You want to look at the admission reqs for the Masters. If they want a particular GPA, then you want to take some courses for grade. If they want certain courses as prerequisites, then make sure you have them.

You can, but I usually recommend going ahead and enrolling as soon as you make the decision to go for it.
