AS to BS or BA plan needed

My mom wants to go back to school and get her bachelors degree as quickly as possible. She works part time and can dedicate afternoons and weekends to her online studies. 

Location: Arkansas 
Age: 34
Degree wanted: BS or BA, either in English, Communications, Education or Marketing fields 
Current Regional Accredited Credits: Associate of Science in Liberal Arts and Sciences from ASU Beebe in Beebe, AR
Budget: $3000 but can spend more if needed 

Any help is welcome and appreciated!!!

Since she is looking for a degree in those specific fields, I'm going to assume that your mother is comfortable with writing papers. That makes her a good candidate for UMPI. At $1400 per 8-week session, most students are able to get their degrees for about your budget, though a few need an extra session or two.

Does she have any lab sciences? Was Spanish, or any other foreign language, a requirement of her previous degree?

Thank you! She requested her transcript but it hasn’t come in yet. Some of the classes she remembers taking are:
Freshman English I
Freshman English II
Oral Com
Fine Arts - Theater
College Algebra
Intro to Psychology
Developmental Psychology
Philosophy
World Civ to 1660
US History since 1876
Biological science & lab
Physical science & lab.
Intro to Teaching
Educational Technology
A weird college PE class?
Other electives she doesn’t remember but knows they weren’t sciences/labs.
Spanish CLEP (6 credits)

She does not mind writing but doesn’t feel as confident doing so as she used to!

Assuming she got at least okay grades in everything, she doesn't need any more sciences. That's covered. For foreign language, she can take Spanish I at Sophia. What is her professional goal with the degree? Is it just a need to 'check the box' of having a bachelor?

UMPI YourPace likely a great choice for her - https://online.umpi.edu/what-is-your-pace/.  There have been comments here that the Marketing major/minor can be 'more work' than the other areas; taking longer - resulting costing more for extra term(s).

She is a certified medical and legal interpreter, and has often expressed feeling inferior to those she works with due to her education level, so it’s definitely just to “check the box.” She has looked over the degree plans and I think is leaning towards the BLS in educational studies ?

I believe she graduated with a 3.2 GPA! We’re working on building her degree plan and trying to figure out what 30 Sophia credits she needs before she applies to UMPI.

After pulling up her ACE transcript she just saw she has 6 more credits: 

Straighterline: Medical Terminology (3)
SOPHIA: Developing Effective Teams (1)
The Institutes: Ethics and the CPCU Code of Professional Conduct (2)

The Ethics credits are gone. They won't transfer over to Credly and that's where ACE transcripts reside now. Definitely work on getting all of her ACE credits over to Credly ASAP.

Since her intention is to 'check the box' (which is a completely reasonable goal for many, if not most) she should choose what interests her the most.  So, if the Educational Studies is what appeals to her, then that is what she will enjoy and complete without haste - resulting in the bachelor degree being awarded, meeting the goal she desires.
