Student will be able to apply a scientific approach to personal decision making about nutrition; describe how the digestive system works; explain the difference between carbohydrates, proteins, and lipids; explain the difference between healthy weight loss and "fad diet' weight loss; describe how vitamins, minerals, and water function in our daily diet; identify a person's changing nutritional needs at all ages; and identify several potentially hazardous foods.
Objective: To provide the student with a foundation in the science of nutrition and knowledge on how to apply this science.
Learning Outcome: Upon successful completion of this course, the student will be able to apply a scientific approach to personal decision making about nutrition; describe how the digestive system works; explain the difference between carbohydrates, proteins, and lipids; explain the difference between healthy weight loss and "fad diet' weight loss; describe how vitamins, minerals, and water function in our daily diet; identify a person's changing nutritional needs at all ages; and identify several potentially hazardous foods.
Instruction: Major topics covered in the course are nutrients and how they affect the body; the difference between carbohydrates, lipids, and proteins; the effects of vitamins, minerals, and water on the body; the importance of exercise and diet for a healthy life; and the safety of our food supply. Methods of instruction include self-study, study guides, textbooks, and a proctored final examination.
Credit Recommendation: In the lower division baccalaureate/associate degree category, 3 semester hours in Nutrition. (6/07)
